The water-displacement method is a traditional sesame oil extraction technique with a history of more than a thousand years. Unlike modern mechanical pressing, this process uses hot water to separate the oil from roasted sesame paste.

The process begins by roasting sesame seeds until they develop a rich golden color and distinctive aroma. The roasted seeds are then ground into a fine paste and mixed with hot water at approximately 90°C at a ratio of 1:0.45. Through continuous stirring, the sesame oil gradually separates from the paste, rises to the surface, and is then collected by skimming.

The principle behind this traditional method is based on the natural difference in density and solubility between oil and water. Since sesame oil is lighter than water and does not dissolve in it, the oil naturally separates and rises to the surface, making it possible to collect the oil efficiently.

Sesame oil produced using the water-displacement method typically has a beautiful amber color, a rich and long-lasting aroma, and a distinctive roasted flavor. The gentle traditional processing helps preserve the characteristic taste and nutritional value of sesame seeds.

However, compared with mechanical pressing methods, the oil yield is relatively low, generally around 28%–30%. This traditional production process requires more time and labor, which also contributes to the higher market value of the finished oil.

Stone Milling: The roasted sesame seeds are fed into an electric, low-speed stone mill, typically operating at approximately 28–32 rpm, where they are ground into a smooth and uniform paste. This low-temperature physical grinding process helps preserve the natural nutrients, aroma, and flavor of the sesame seeds. The grinding stone features a reinforced center design, providing excellent strength and durability for long-term operation.

Oil Extraction (Water-Displacement Method): The sesame paste is processed using the traditional water-displacement method, in which water is added and the mixture is continuously stirred and agitated to separate the oil. Alternatively, modern hydraulic pressing equipment can be used for mechanical oil extraction.

Sedimentation and Filtration: Sedimentation tanks are used to separate sesame residue and excess water. The oil then undergoes hot and cold filtration to remove remaining impurities, resulting in clear, pure, and high-quality stone-milled sesame oil.
