The basic principle of vacuum freeze drying is based on the three-state change of water. Water has solid, liquid and gaseous states, and the three states can be converted to each other and coexist. When water is at the triple point (temperature is 0.01℃, water vapor pressure is 610.5Pa), water, ice and water vapor can coexist and balance each other. Under high vacuum conditions, the sublimation principle is used to make the water in the pre-frozen material sublimate directly into water vapor without melting the ice, thereby achieving the purpose of freeze drying. Freeze-dried products are spongy, have no shrinkage, have excellent rehydration properties, and contain very little water. After corresponding packaging, they can be stored and transported for a long time at room temperature.
