1. Washing: The mud and dust on the surface of the fresh ginger are removed with running water.
2. Peeling: The outer skin of the ginger is removed.
3. Slicing: The thickness of the slices should be as uniform as possible. Tests show that slices thinner than 1mm shorten drying time but lead to a loss of gingerol, the key ingredient. Slices thicker than 4mm result in uneven drying, which can cause surface hardening and darkening. The optimal slice thickness is around 2mm, and slices should be as even as possible.
4. Drying: The drying temperature should generally range between 60-80°C, with the goal of achieving a moisture content of less than 12%. If the temperature is too low, it prolongs drying time and may cause unwanted biochemical reactions that degrade the ginger slices. If the temperature is too high, it leads to a significant loss of gingerol, reducing the quality of the ginger powder.
5. Grinding: The dried ginger slices are ground while avoiding localized high temperatures during the process.
6. Sifting: A vibrating screen with 80-mesh is used to sift out larger particles, especially ginger fibers that can't be crushed.
7. Packing: Packaging options include bottles, pre-made bags, or bulk bags, with sizes ranging from 500g to 20kg or more, depending on customer requirements.
